Just drag the current itunes you have in your applications folder to your trash. You shouldn’t need to delete anything else. Go to this site and pick the version you wanthttp://www.oldapps.com/itunes.php
Go through the installation process and open the program. Since you didn’t delete the itunes library all your music should be there still.
When itunes asks you to update just click “later” then there should be somewhere in the preferences that you can opt to have the program not automatically check for updates.
